  • Pickled yam, bacon and marinated clams, with tartar and ají sauces (Begoña Rodrigo. La Salita Restaurant)

Starters:

  • Tuna tataki, celeriac and seeds (Beatriz Sotelo)
  • Beans with lobster and courgettes (Macarena De Castro, Maca De Castro Restaurant)
  • From henhouse to table: freshly-laid egg, mayonnaise, tuna (Fina Puigdevall, Les Cols)

Main courses:

  • Greater forkbeard with fennel and char-grilled lettuce (Macarena De Castro, Maca De Castro Restaurant)
